On March 13, 2024, Bangkok University International students were given an exciting project-based assignment by Mr. Pattarawut Amornvech, Assistant Director of Food and Beverage – Empire Tower, from the Bangkok Marriott Marquis Queen’s Park team via a live MS Teams meeting. The task was to design a menu and table setting for a sustainable restaurant offering casual-fine dining.

Our recent culinary workshop, guided by the seasoned Chef Alain Müller, unfolded into a delightful feast for the senses. With over 35 years of culinary expertise, Chef Müller showcased his mastery with a menu that included Malakoff on a bed of baby greens & vegetable petals with raspberry vinaigrette, seared and slow-cooked beef tenderloin, Culinary Arts Academy-style wild mushroom risotto, and glazed ginger local seasonal vegetables.
